1. Microwave rice according to package directions.
2. While rice cooks, heat a medium nonstick skillet over medium-high heat. Add almonds and coconut; cook 2 minutes or until lightly browned, stirring constantly. Remove from heat; add rice, cumin, and salt, stirring to blend.
