This easy rice side dish recipe adds a nice flavor punch to whole-grain brown rice with almonds, shredded coconut, and spices. It pairs well with Asian dishes.
1 (10-ounce) package frozen whole-grain brown rice
1/3 cup slivered almonds
3 tablespoons flaked sweetened coconut
1/2 teaspoon ground cumin
1/8 teaspoon salt
How to Make It
Microwave rice according to package directions.
While rice cooks, heat a medium nonstick skillet over medium-high heat. Add almonds and coconut; cook 2 minutes or until lightly browned, stirring constantly. Remove from heat; add rice, cumin, and salt, stirring to blend.
