PattyP is absolutely right - if these brown on the edges they are overcooked, and 1/8 inch is too thin. I dust my cookies with powdered sugar instead of the coconut, and they are the best cookies EVER. Labor intensive, and sometimes easy to break the cookies when filling them - but that just means I have to eat those broken cookies...

These cookies were deeeeelicous! Since I made these for 3rd graders I omitted the rum. I forgot about the dough in the freezer, so instead of 30 mins. it was in there for more like an hour. When I took the dough disks out they were solid, I let them sit at room temp. for about 15 mins then started to roll the dough. My advice is GENTLY roll the dough don't press into it with the pin or it will get stuck to the surface you're working with. If you notice the dough is not rolling out flip it over. Buena Suerte.

What a disappointment! These cookies smelled great while they were in the oven. My husband couldn't wait to try one. I put one together, tasted it... and it was BLAND. My husband said the same thing. It's not bad, just really really bland. There's practically no taste to it at all. Definitely won't make these again!
