Agave Sweet Potato Caserole
This is a sweet casserole that make for a good fall dish to add as a side to dinner.

Ingredients
- 1 tablespoon(s) coconut oil
- 2 sweet potatoes large cut into 1/2 inch cubes
- 2 tablespoon(s) agave syrup
- 3/4 teaspoon(s) salt
- 1/2 teaspoon(s) cinnamon
- 1 cup(s) water
Preparation
- Cut potatoes in 1/2 inch cubes. Grease a medium size baking dish with half a tablespoon of coconut oil. Melt the other half of tablespoon of coconut oil to a liquid state. Add SP to dish, cover in liquid coconut. Add water, agave, and salt. Mix around and top with cinnamon. Cover with foil. Bake at 375 degrees for 45 mins.
