Adobo Tuna with Black-Eyed Pea Salad
Ingredients
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 4 garlic cloves, minced
- 4 (1/2-inch-thick) tuna steaks (about 1 1/2 pounds)
- 1 teaspoon olive oil
- 1 teaspoon cracked pepper
- Black-Eyed Pea Salad
- Garnishes: lime slices, fresh cilantro sprigs

Preparation
- Combine first 5 ingredients in a large heavy-duty zip-top plastic bag; add tuna. Seal; chill 1 hour, turning occasionally.
- Remove tuna from plastic bag, discard marinade.
- Place tuna on a lightly greased rack in a broiler pan.
- Broil 4 inches from heat (with electric oven door partially open) 4 minutes or until desired degree of doneness. Do not turn. Serve with Black-Eyed Pea Salad. Garnish, if desired.
