If you thought the raindrop cake was mesmerizing, you may want to have a seat. There's a new food trend circling the Inter-webs as of late that's totally worthy of the hashtag #foodporn. Ladies and gents, I introduce to you, the mirror cake:

Dubbed "mirror cakes" due to their glossy, shellacked finish, these swoon-worthy confections have recently caught the attention of the greater Instagram food community, and it's easy to understand why. Once you start staring, it's hard to stop... we're fairly enamored.

 

The sleek and shiny desserts can be most closely identified as a type of entremet--an intricate layered mousse cake that's popular among European pastry chefs. Entremets are known as the pinnacle of skill and finesse within the pastry world--and the sleek Mirror Cake is no exception. The mirror cake is an entremet that's been masterfully coated in a glaze made from boiled-sugar and condensed-milk which creates its stunning glassy finish. Basically, it's a fancy cake-decorating technique gone viral.

 

It's unclear who originated the first-ever "mirror cake," but the concept has most recently been popularized by Russian cake blogger Olga Noskova. Noskova, who's been dubbed the "Picasso of Cakes," started posting her creations to Instagram and is racking up followers by the thousands through posting jaw-dropping snapshots of her now-famous creations.

 

 

“It all began with my love for macarons,” Noskova told Bored Panda. “Later I began to devote a lot of time to study confectionery arts. I really wanted to learn how to make European mousse cakes. My mirror glaze is the result of my experience.”

Noskova recently started her own YouTube channel, and although she isn't revealing any of her secrets, she might just make you drool at your desk over videos like these.

 

 

 

Don't worry, if you're dead-set on learning how to make a mirror cake, there are plenty of other food bloggers out there that are more than willing to guide you, but be warned: The job is only one for the most dedicated DIY-ers out there.
