My husband is Scotch-Irish and loves to celebrate St. Patrick's Day.  Usually we go out to an Irish pub for corned beef and cabbage, but this year I'm making green beer and beef stew to celebrate the day.    The stew looks hearty and is packed full of veggies, plus, it will take a little bit less time to cook than the corned beef. I already have a good number of these ingredients in the pantry, which is always a key factor when I'm selecting my recipes for the week! 

The Guiness Stout in the stew is likely the ingredient that really makes it perfect for St. Patrick's Day and gives it distinctive flavor.  Generally I prefer to use a dark beer in stews because of the more intense flavor.   However, when I make green beer, I like the color of green that you get with a lighter beer, so we'll just have to have both on hand while the stew simmers.  What are you cooking for St. Patty's Day?
