Rachael Ray Throws a Wedding

Recently I was down for the count with my annual Christmas Flu.  One of these years (since it's now going on a good 5-6 year tradition) I'm going to learn and get my holiday stuff done before the Christmas Flu hits ... one of these years.  So while I was recuperating, I caught up on all my Tivo'd episodes of Rachael Ray's talk show.  On one of her recent episodes, she came to the rescue of 31 Texas brides that were left stranded when Hurricane Ike demolished their booked reception venue.  Many of them were out their life savings, not to mention having their wedding plans and dreams capsized in the process. 

Rachael swooped in and saved the day.  She had her whole team (Colby, Gretta, Kristan) in to plan a wedding for the whole slew of brides (31 to be exact), on the same day, on the Houston Astro baseball field.  It was quite the undertaking, and it was amazing what they accomplished in such a short amount of time.  (You can read a bit more about the whole shebang right here.)  Like Dream Wedding, Take 2.  Ahh, but the most important thing... what kind of food they serve?  The main course was a Free-Range Chicken Breast with Lemon-Olive Oil Pan Sauce.  This sucker makes a lot of sauce, so I ended up serving it over rice, although the recipe didn't suggest it.  A nice and easy dish that quickly leaves all those dried-chicken-dishes-served-at-wedding-receptions in the dust.  Eat up!
