Pan-fried Okra, Onion, and Tomatoes from Southern Living is THE quintessential summertime side, especially for those of us in the south. I was introduced to this recipe in 2005 when I featured a family that hosted a cookout and seaplane splash each summer on Lake Guntersville, Alabama. Hundreds of friends, neighbors, and seaplane pilots from around the region attended the party and everyone feasted on the most delicious smoked ribs, grilled corn, and of course, this okra salad.

I will admit, I've tried to make this dish when the vegetables were out of season and the results were just okay. However, NOW is the time to head to the farmer's market to find peak-season okra and tomatoes. This veggie salad is so simple to prepare and it makes 8 hearty servings. I like to serve it at summer cookouts alongside grilled chicken, fish, or steak. Give it a try and let me know what you think.
