Here's another update on how I am using up all the fresh produce that our friends are bringing us this summer.  I'm so glad to have friends with gardens, but do feel a little bit guilty that I'm enjoying all of these veggies without putting in the labor.  Well, only a little guilty! 

This week's feature:  Okra

 Well, the first thing to make when you have is okra is fried okra.  In my opinion, you really don't need to do anything else with it at all.  I don't typically eat a lot of fried foods, but I find it impossible to resist fried okra.  Be sure to use cornmeal for the coating.  You'll be glad you did.   (Watch our video on How to Make Fried Okra if you need some tips.) If you get tired of eating plain fried okra (is that possible?!), you can make Fried Okra Salad or Fried Okra Tacos

Last night I made Stewed Okra and Tomatoes, but instead of leaving the okra pods whole, I sliced them.  For some reason, I just like them better sliced.  Spoon this veggie mixture over rice and you've got a great meatless dinner.  Or, if you want just a little meat, sprinkle some chopped ham or bacon in with the veggies.

If I still have some okra next week, I'm going to try making Pickled OkraTailgating season is almost here and some pickled okra is a nice addition to Bloody Marys.   What are your favorite okra recipes?  Let me know. I have a lot left.
