On a recent business trip to Las Vegas, we decided to try Dos Caminos, a new restaurant located in the Palazzo Resort Hotel Casino. The one in Las Vegas is fourth in a group started in Manhattan and offers unique Mexican recipes by Corporate Executive Chef Scott Linquist, the co-author of the Dos Caminos cookbook, Mod Mex.
This place is loud to the ears and the eyes! Pulsating music was provided by a DJ and a few musicians playing on a stage in the bar. The walls are covered in a skull motif, back lit to make them appear to float. Candles are everywhere.
We started with an appetizer of very rich, Mexican three cheese fondue and chips. For dinner, I tried the Dos Enchiladas along with a side of spicy Mexican Red Rice. I normally don't order enchiladas from restaurants at home since all I can usually taste is the corn tortilla. I was impressed by the mild corn flavor and the contrast of nutty tasting, mole poblano and milder tomatillo verde sauces. It was fun mixing the two to get even more interesting flavors. I would definitely order these again! The food was excellent, service was quick and the staff knowledgeable and helpful.
If you like Mexican food with a contemporary flair, and an energetic atmosphere then Dos Caminos - Las Vegas is a great place to dine.
