Every 4th of July, it is near impossible not to reach for the luscious strawberry pie glistening in the corner of my eye, or the juicy hot dog sizzling on the grill. Any sort of healthy diet flies out the window, but in my opinion, it needs to. You need a little bit of indulgence in your life and the 4th is the perfect day to partake in grilled favorites and decadent desserts. While cutting out sugar may not be an option, if you live a gluten-free lifestyle based on a personal choice, or medical reasons, no one wants to feel sick on a holiday. The good news though, is that you can totally enjoy all the creaminess and deliciousness of the 4th of July sans gluten.

 

Grilled Eggplant Sandwiches

 

First, let’s start with the most important menu item— the burger. In this recipe, hearty eggplant takes on the profile of bread to create a delicious play on a “grilled cheese” sandwich.
