The air is finally turning crisp and cool here, so I'm in the mood  for hearty, comfort foods like soups, stews and casseroles. I found a recipe on The Kitchn that seems to fit into all three of those categories, so it looks like that's what I'll be making for dinner tonight: Braised Onion Chicken with Gruyere.

It's sort of like the chicken thigh version of French Onion Soup, which is one of my favorite soups. First you caramelize the onions and deglaze the pan. Then you brown the chicken and deglaze the pan with more broth. Then you combine the onions and chicken and bake for about 30 minutes. When the chicken is done, you top with the cheese and broil it -- just like you do for French onion soup.  (Check out the step-by-step photos on The Kitchn.) My mouth is already watering and I can hardly wait to get home and start cooking.
