We know, we know... Mardi Gras week is officially over, but indulging in a little cajun flair is hard to resist. If you want to keep that jazz and spice going a little longer look no further than classic jambalaya. This dish is considered a classic for a reason. It's perfect no matter the time of year (though it's certainly very much appreciated in this cold weather) and features some of the best flavors around.

This particular jambalaya recipe stars some great players: shredded turkey and andouille sausage, a traditional sausage used for this dish.
