Is there anything you can't do with eggs? They're perfect on their own, scrambled, poached, in a sandwich, deviled, mashed up, and even pickled. Well, okay, I've personally never tried a pickled egg, so I wouldn't know how those taste. However, what I do know is that an egg salad sandwich like the one above is the perfect cure for a lunchtime pick-me-up, and if this recipe featured here has anything to say about it, you should probably listen in.

Choose some crispy bacon, sliced tomatoes, and big leafy lettuce leaves when polishing off this creation. Though eggs are the real star of this recipe here, there's no reason to forget the other players. If you'd like to go for a more low-fat and just-as-delicious option, substitute regular bacon for turkey bacon.
