     Ahhh, the pool is open, the sun is shining, and I’m digging out my dresses and flip-flops. In my eyes, summer is officially here! And with it comes plenty of fun picnics, barbecues, concerts, and of course, delicious summer foods. Who’s ready to fire up the grill and throw on some hot dogs and hamburgers? But although I love some great barbecue, the one thing that defines summer picnic foods for me has got to be the side dishes.

     There are so many different types of salads, fruit, and veggie dishes that just taste so cool and fresh, which, for me embraces the feeling of summer. One of my favorite side dishes that my mom makes every year is a Summer Broccoli Salad. It’s made with fresh broccoli, chopped pecans, and everyone’s favorite ingredient, bacon. It’s one of those simple dishes that lets you know it’s summer, and a crowd-pleaser for sure!



Summer Broccoli Salad

2 heads broccoli, chopped

1 lb. bacon, fried and crushed

2 c. shredded cheddar cheese

1 c. chopped pecans

1 small onion, chopped

1 c. mayo

2 tbsp. vinegar

½ c. sugar

Mix all ingredients well and chill.
