If you're living most anywhere in the Northern hemisphere, you've been sweating out the hottest, most wretched part of the summer like me. Here in the South, I am swimming through the air from air-conditioned building to car to building. And with my AC working its hardest, I am turning on heat-creating appliances as little as possible, but I wouldn't want to cut back on my dessert-making habits. So I turn to no-bake desserts.

Last week I made this delicious Strawberry Icebox Cake I found on The Kitchn. You layer graham crackers with whipped cream and strawberries and then top it with a ganache. Mmm. The crackers soften and meld with the other ingredients for a few hours. It tastes so very fruity and refreshing. 

 It seems that creamy fresh whipped cream is the best main ingredient for no-bake desserts because it also serves as the base for another of my favorites, Peanut Butter Pie (from the Bride and Groom First and Forever Cookbook). [Actually, you have to bake the crust according to the recipe I use, but you can always buy a pre-made graham cracker crust and skip that step.] Simply whip peanut butter and powdered sugar into whipped cream and chill for this fluffy, flavorful pie. I like it topped with chocolate chips.
