Prep for Lanny's Salad is similar to the sugared pecan-and-cheese-topped salads you may have made before. Queso fresco tastes
and crumbles a little like goat cheese or feta cheese and is often sprinkled on refried beans and enchiladas. Find it at supercenters
or Hispanic markets.
Though artichokes and asparagus might not seem like they jive with the rest of this Mexican menu, Lanny thought they'd be
a great vegetable side anyway! To eat artichokes like a pro, pull each leaf through your teeth to enjoy the tender portion
on the bottom of the leaf.
For this dish, brush shrimp with a five-ingredient sauce of olive oil, garlic, chiles, lime juice, and salt. The guajillo
chiles Lanny calls for are dried peppers with a bright tangy taste and kick of heat.
