Is there a better way to welcome summer than with an ice cream cake? I don't think so!
As you can see, this cake has thick layers of ice cream and thin layers of homemade brownies. The bottom brownie layer is baked in a springform pan, while the second brownie layer is baked in a regular, round cake pan. The tall sides of the springform pan make it easy to layer the ice cream and brownies all in one stack, instead of trying to place individual layers on top of each other as you would with a regular cake. When assembling this cool treat, the brownies are drizzled with butterscotch sauce, and then softened and slightly melted ice cream is spread on top of that. Next, the cake goes into the freezer to harden the ice cream.
This recipe uses classic vanilla, but you can go crazy with the ice cream flavors if you'd like. I personally think it would be fun to experiment with various kinds of sauces and ice creams. Chocolate chip cookie dough, mint chocolate chip, and peanut butter cup would all be tasty substitutes for the vanilla. This cake is so customizable to your preferences. The possibilities really are endless. You can make this cake over and over, with different flavors each time, all summer long!
