Much ado has been made about Tasia Malakasis' Belle Chevre goat cheese farm, located in northern Alabama, not far from our offices here in Birmingham.  After tasting some Belle Chevre cheese at Dean & Deluca's in New York CIty, this Alabama native convinced the owner to sell her the business and left her high-powered marketing executive job to return home and run Belle Chevre. 

Recently, Tasia paid us a visit to produce some goat cheese-focused episodes of our 5 to Try video series: goat cheese appetizers, goat cheese surprises, and goat cheese classics.  Pimento cheese is a Southern classic, and one of Tasia's favorite swaps is to substitute goat cheese for the traditional cheddar in this favorite sandwich spread.  Though Belle Chevre sells a prepackaged pimento goat cheese (Pimento Chevre), Tasia was kind enough to share how she would make this cheese in her own kitchen.  Enjoy!

Tasia Malakasis' Pimento Chevre:

8 oz fromage blanc

3 whole pimentos (hand-crushed to leave some large chunks)

1 clove smashed garlic

1/4 cup minced onion

salt (to taste)

Combine all ingredients in a bowl and serve on a sandwich, or with crackers or chopped fresh vegetables.
