9 Recipes That Prove Watermelon Doesn't Have to be Served Cold

Who doesn't love sinking their teeth into a gigantic slice of juicy, ice-cold watermelon? That's not a rhetorical question. Everyone. Loves. It.

And summer is the season to love on some watermelon--both with diving into a chilled wedge face-first and by playing with the ripe fruit in all sorts of applicationa. One of my current favorites? This Watermelon Margarita.

But warm watermelon? Though some shudder at the idea, I assure you that watermelon delivers just as much refreshing delight mixed into stir-frys and charred on the grill as it does tossed in cold summer salads. Expand your watermelon comfort level by trying out some of these warmermelon recipes. You'll thank me later.

1.) Beef-and-Watermelon Stir-fry

Ripe red watermelon, cut into sticks, is mixed into this vibrant steak and snap pea stir fry right as it's removed from the heat. The hot-off-the-stove dish will warm the watermelon without quite cooking it, and you'll love the addition of this bright and sweet juiciness paired with your favorite Asian flavors. Serve immediately with hot cooked rice.

2.) Grilled Watermelon with Blue Cheese and Prosciutto

Pungent blue cheese and salty prosciutto create perfect balance with sweet, smoky melon in this exceptional summer side dish. Finish with a drizzle of balsamic glaze and top with fresh basil. This also makes for an impressive (but so easy) app for summer entertaining.

3.) Grilled Watermelon and Shrimp Skewers

Grilling watermelon adds a charred smoky depth to the fruit and gives it a slightly meaty texture that partners well with shrimp. Cooking takes only a couple of minutes, so have both sets of skewers ready to go before you start.

4.) Grilled Watermelon Pizza

For a fruity, finger-friendly appetizer, grill watermelon wedges and top with pickled onions, blue cheese, and pecans. To make it a dessert, just change the toppings--We're feeling Greek yogurt, honey, berries, and pecans.

5.) Grilled Calamari, Watermelon, and Tomato Salad

Feeling adventurous? A meet-up of mild grilled calamari, fresh produce, and dynamic seasonings might do the trick. If you like it fiery, use 2 tablespoons of black pepper and 2 teaspoons Aleppo pepper, and skip seeding the serrano chile.

If you can't find haricots verts, grab a handful of regular green beans and cook them a few minutes longer. Halloumi is a wonderfully salty-nutty cheese that's firm enough to stand up to grilling; if you can't find it, use ricotta salata or queso fresco.

Addictively briny, halloumi cheese is a favorite for grilling, especially when paired with the sweetness of watermelon. The outside of the cheese gets beautifully brown and crisp, while the inside stays tender. Find it at specialty foods stores and high-end supermarkets.
