Kitchen Tips:

You can prepare the salad dressing up to a week in advance. Keep it covered and refrigerated. Shake well before dressing the salad. If you can't find shallots, substitute 1 tablespoon minced scallion.

You can also make the Molten Chocolate cakes up to a day in advance; do not bake. Cover the ramekins with plastic wrap and refrigerate. Remove plastic wrap and bake just before serving. Allow a couple of extra minutes baking time if you put them in the oven straight from the refrigerator.

Unmold and serve the cakes right out of the oven to preserve the molten centers. Or, if you like, serve them in the ramekins on plates. Just be sure to warn your guests not to touch the hot dishes.
