Roll up this easy sandwich supper in 35 minutes. (Serves 6)

Thai Beef Salad Wraps

Grilled Soy-Glazed Eggplant: Slice 4 Japanese eggplants crosswise into 1/4-inch-thick slices. Combine 1 1/2 tablespoons low-sodium soy sauce, 2 teaspoons fresh lime juice, and 1 teaspoon dark sesame oil; brush evenly over both sides of eggplant. Place on a grill rack coated with cooking spray; grill 1 minute on each side or until tender.

Iced green tea


1. While grill heats:
• Chop herbs and cucumber for wraps
• Squeeze juice for wraps and eggplant
• Halve tomatoes and slice shallots for wraps
• Prepare soy sauce mixture for wraps

2. While steak grills:
• Slice eggplant
• Brush eggplant slices with soy
