This potato is out of this world! It was so good that my boyfriend and I ate everything else on our place first, saving this for last...kinda like dessert. I will definitely make this again!
Sweet-Hot Salmon Supper
These delectable salmon fillets need virtually no attention, so while they're baking in the oven, fix steamed broccoli and pecan-topped sweet potatoes for some healthy, colorful sides. (Serves 4)
• Baked sweet potatoes with brown sugar-pecan butter Pierce 4 (8-ounce) sweet potatoes with a fork. Microwave at HIGH 12 minutes or until done. Combine 2 tablespoons softened butter, 2 tablespoons brown sugar, and 1 1/2 tablespoon finely chopped toasted pecans. Top each potato with about 1 tablespoon butter mixture.
• Steamed broccoli spears
Total time: 22 minutes
1. While oven preheats for salmon:
• Prepare glaze for salmon.
• Scrub sweet potatoes.
• Prepare butter mixture for sweet potatoes.
2. While salmon cooks:
• Cook sweet potatoes.
• Prepare broccoli.
