• Baked sweet potatoes with brown sugar-pecan butter Pierce 4 (8-ounce) sweet potatoes with a fork. Microwave at HIGH 12 minutes or until done. Combine 2 tablespoons softened butter, 2 tablespoons brown sugar, and 1 1/2 tablespoon finely chopped toasted pecans. Top each potato with about 1 tablespoon butter mixture.
