Sunny Frittata Menu
A combination of eggs, cheddar cheese, and orange bell pepper lends this frittata a cheerful hue. Save prep time with frozen diced bell pepper and prechopped pineapple.
Pineapple salad *
* Combine 4 cups cubed fresh pineapple and 1 cup halved red grapes in a medium bowl. Combine 2 tablespoons orange juice, 1 tablespoon honey, 1/8 teaspoon ground red pepper, and a dash of salt in a small bowl. Drizzle juice mixture over pineapple mixture; sprinkle evenly with 2 tablespoons toasted sweetened coconut and 2 tablespoons chopped macadamia nuts.
