Southwestern Omelet for Two
Pour a glass of refreshing pineapple juice to accompany this 10-minute meal. (Serves 2)
• Quick quesadillas Preheat broiler. Coat 4 (6-inch) corn tortillas with cooking spray. Place 2 tortillas, coated sides down, on a baking sheet. Top each tortilla with 2 tablespoons shredded reduced-fat cheddar cheese and 2 teaspoons chopped green onions. Top with remaining tortillas, coated sides up. Broil 2 minutes or until golden. Turn quesadillas over; broil 2 minutes or until tops are golden and cheese is melted. Cut each quesadilla into quarters; serve with salsa and fat-free sour cream.

1. Preheat broiler for quesadillas.
2. While oven heats, chop and measure ingredients for quesadillas and omelet.
3. Assemble quesadillas.
4. While quesadillas cook, prepare omelet.
