Smoked Ham Hash
Peppery wilted spinach*
* Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add 1 minced garlic clove; sauté 30 seconds. Gradually add 2 (10-ounce) packages fresh spinach; cook 3 minutes or until spinach wilts. Stir in 1 tablespoon pepper vinegar, 1/4 teaspoon salt, and 1/8 teaspoon freshly ground black pepper.
