Shrimp and White Bean Salad with Creamy Lemon-Dill Dressing Menu

Beat the heat with this no-cook meal. For a flavor variation, try arugula and basil in place of watercress and dill. You can also substitute rotisserie chicken for shrimp. (Serves 4)

Shrimp and White Bean Salad with Creamy Lemon-Dill Dressing

* Combine 1/4 teaspoon kosher salt, 1/8 teaspoon chili powder, 1/8 teaspoon ground cumin, and 1/8 teaspoon ground red pepper. Cut each of 4 large plum tomatoes into 4 wedges, and lightly sprinkle with salt mixture.
