Shrimp Pad Thai Supper

Pair a tangy cucumber salad with Thai-style shrimp and rice noodles for a refreshing meal that's ready in 30 minutes. (Serves 6)

Spicy cucumber salad Combine 2 cups thinly sliced seeded peeled cucumber, 1 cup julienne-cut bell pepper, and 1/4 cup thinly sliced red onion in a large bowl. Combine 1 tablespoon sugar, 2 tablespoons fresh lime juice, 1 tablespoon fish sauce, and 1/2 teaspoon crushed red pepper in a small bowl. Pour dressing over vegetables, toss to combine.

• Prepare cucumber salad.

2. While noodles soak:
