Quick Dinner for One

Fast-cooking couscous pairs with bottled roasted bell peppers, canned artichoke hearts, and a simple vinaigrette for a speedy solo meal. (Serves 1)

Balsamic-Brown Sugar Strawberries Toss 1 cup halved strawberries with 1 tablespoon brown sugar, 2 teaspoons balsamic vinegar, and 1 teaspoon chopped fresh mint. Let stand at room temperature 20 minutes before serving.
