Salt, pepper, and a hot grill pan are all it takes to cook up delicious Pan-Seared Flank Steak.
Heat a grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle flank steak with salt and freshly ground black pepper. Add steak to pan; cook 8 minutes on each side or until desired degree of doneness. Let steak stand 10 minutes; cut steak diagonally across the grain into thin slices.

1. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add the mushrooms and thyme to pan; sauté for 4 minutes or until mushrooms are lightly browned. Stir in broth, wine, cornstarch, salt, and pepper; cook 2 minutes or until sauce is slightly thickened. Remove from heat; add butter, stirring until butter melts.

1. Place potatoes and garlic in a medium saucepan; cover with cold water. Bring to a boil. Reduce heat, and simmer 12 minutes or until potatoes are very tender. Drain. Return potato mixture to pan. Add milk, 1 tablespoon butter, salt, and black pepper; mash with a potato masher to desired consistency.
