My Big Fat Greek Salad

A citrus dressing brightens the grilled tuna in this Greek-inspired salad. Great-tasting leftovers are an added bonus to this recipe, so bring any extra to work the next day.

Greek Pasta Salad

Pita Crisps Preheat broiler. Cut each of 4 pitas into 8 wedges. Arrange wedges in a single layer on a baking sheet coated with cooking spray. Lightly brush with 2 teaspoons olive oil, sprinkle with 1/2 teaspoon dried basil and 2 tablespoons freshly grated Parmesan cheese. Broil for 2 minutes or until cheese is melted and pita is lightly browned.

GAME PLAN

Total time: 35 minutes

1. While pasta cooks:
• Heat broiler.
• Heat grill pan.
• Chop onion, slice cucumber, and halve tomatoes.

2. While tuna cooks:
• Prepare dressing.
• Prepare pita crisps.
