Mussels Ravigote Menu

Mussels and fries are a classic pairing in Belgium and France. Ravigote is a traditional French vinegar-herb sauce that is often served with seafood. (Serves 2)

* Cut 1 large baking potato into 1/4-inch-thick strips. Combine potato strips, 2 teaspoons olive oil, and 1/8 teaspoon pepper on a baking sheet coated with cooking spray. Bake at 500 º for 25 minutes or until golden, turning once after 10 minutes. Toss with 3 tablespoons grated fresh Parmesan, 1/4 teaspoon salt, and 1 tablespoon fresh parsley. Serve immediately.
