Miso-Glazed Salmon Dinner

• Wasabi mashed potatoes: Place 2 pounds cubed red potato in a large saucepan; cover with water. Bring to a boil; cook 15 minutes or until tender. Drain. Place potato, 1/4 cup fat-free, less-sodium chicken broth, 1/4 cup reduced-fat sour cream, 2 tablespoons butter, 1 teaspoon wasabi paste, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a bowl. Mash to desired.

GAME PLAN

1. While water comes to a boil for potato and oven heats for fish: • Prepare miso mixture for fish • Combine flavorings for mashed potatoes in a large bowl 2. While potato and fish cook: • Steam bok choy • Chop chives

QUICK TIP: Place a steamer basket over the boiling potatoes to steam the bok choy during the last few minutes of the potatoes' cook time.

Miso-Glazed Salmon

A sweet-salty miso, brown sugar, and soy sauce glaze caramelizes in about 10 minutes as it cooks atop rich, meaty salmon.

Ingredients

  • 1/4 cup packed brown sugar
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons hot water
  • 2 tablespoons miso (soybean paste)
  • 4 (6-ounce) salmon fillets (about 1 inch thick)
  • Cooking spray
  • 1 tablespoon chopped fresh chives

Preparation

Preheat broiler.

Combine first 4 ingredients, stirring with a whisk. Arrange fish in a shallow baking dish coated with cooking spray. Spoon miso mixture evenly over fish.

Broil 10 minutes or until fish flakes easily when tested with a fork, basting twice with miso mixture. Sprinkle with chives.
