Miso-Glazed Salmon Dinner

Serve bok choy, wasabi mashed potatoes, and quick cooking salmon for an easy Asian-inspired meal. (Serves 4)

Wasabi mashed potatoes: Place 2 pounds cubed red potato in a large saucepan; cover with water. Bring to a boil; cook 15 minutes or until tender. Drain. Place potato, 1/4 cup fat-free, less-sodium chicken broth, 1/4 cup reduced-fat sour cream, 2 tablespoons butter, 1 teaspoon wasabi paste, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a bowl. Mash to desired.

GAME PLAN

1. While water comes to a boil for potato and oven heats for fish: • Prepare miso mixture for fish • Combine flavorings for mashed potatoes in a large bowl 2. While potato and fish cook: • Steam bok choy • Chop chives

QUICK TIP: Place a steamer basket over the boiling potatoes to steam the bok choy during the last few minutes of the potatoes' cook time.
