Add pitted kalamata olives to the salad, if desired. (Serves 4)
* Combine 4 cups torn romaine lettuce, 1/2 cup thinly sliced red onion, 1/2 cup thinly sliced cucumber, 1/2 cup halved cherry tomatoes, and 1/2 cup crumbled feta cheese in a large bowl. Combine 1 tablespoon lemon juice, 2 teaspoons red wine vinegar, 1/2 teaspoon dried oregano, and 1/4 teaspoon salt in a small bowl. Gradually add 1 tablespoon extravirgin olive oil, stirring constantly with a whisk. Drizzle oil mixture over salad; toss well.
