Even nonvegetarians will appreciate this hearty, flavorful supper. Because the mac and cheese doesn't require baking, this streamlined menu works well on a weeknight. (Serves 4)
* Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add 1 tablespoon minced garlic; sauté 30 seconds. Add 1/2 teaspoon salt, 1/4 teaspoon crushed red pepper, and 1 pound trimmed Broccolini; sauté 2 minutes. Add 1/2 cup water and 1 tablespoon lemon juice. Cover, reduce heat, and simmer 10 minutes or until tender.
