Jamaican Pork Salad Dinner
This colorful menu of sweet potato wedges, fresh fruit, and a zesty homemade dressing is ready in just over 30 minutes. (Serves 4)
• Roasted sweet potato wedges: Combine 2 pounds sweet potato wedges, 2 tablespoons vegetable oil, 1/2 teaspoon salt, and 1/8 teaspoon ground red pepper; toss to coat. Arrange wedges on a baking sheet; bake at 425° for 25 minutes or until tender, turning occasionally.
