• Spicy cucumber salsa: Combine 1/2 cup rice vinegar, 1 tablespoon sugar, 1 tablespoon minced seeded jalapeño pepper, and 1 teaspoon grated lime rind in a large bowl. Add 3 cups thinly sliced English cucumber and 1/2 cup thinly sliced red onion; toss to coat.
• Rice noodles
1. While grill preheats and water for noodles comes to a boil:
• Marinate chicken
• Prepare peanut sauce
2. While noodles cook:
• Slice cucumber and red onion for salad.
• Toss salad.
3. Thread chicken on skewers, and grill.
QUICK TIP: You can broil instead of grill. In fact, traditional Indonesian saté skewers are often broiled. Place on a broiler pan coated with cooking spray; broil eight to 10 minutes, turning once.
