Home-Style Pork and Greens
Pair golden, crumb-coated pork cutlets with a pile of garlicky greens for a satisfying supper at home. (Serves 4)
• Garlic-scented turnip greens Cook 1 (1-pound) bag prewashed turnip greens in boiling water 5 minutes or until tender; drain. Add 2 teaspoons minced garlic and 2 teaspoons olive oil to pan; cook over medium-high heat 1 minute. Add greens and 1/2 teaspoon hot pepper sauce. Cook 2 minutes, stirring frequently. Add 2 teaspoons red wine vinegar, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper.
• Garlic bread
Total time: 25 minutes
1. While water for turnip greens comes to a boil:
• Set up three shallow dishes for coating cutlets.
• Make breadcrumbs.
2. While turnip greens cook:
• Cook cutlets.
• Prepare garlic bread.
• Cut lemon wedges.
