Penne with Sausage, Eggplant, and Feta
• Bitter greens with olive vinaigrette: Combine 2 tablespoons olive pâté, 2 tablespoons red wine vinegar, 1 tablespoon extravirgin olive oil, 1 teaspoon sugar, 1 teaspoon minced fresh parsley, and 2 teaspoons prepared mustard.
