Grilled Salmon with Apricot-Mustard Glaze Menu
Cooked over the flame, fish makes for a swift supper. (Serves 4)
Parmesan-spinach orzo pilaf*
Pineapple chunks with chopped fresh mint
* Prepare 8 ounces orzo (rice-shaped pasta) according to package directions, omitting salt and fat. Add 3 ounces fresh baby spinach and 1 1/2 teaspoons bottled minced garlic; stir well to combine. Cover and let stand 4 minutes, stirring twice to slightly wilt spinach. Add ½ teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper. Just before serving, stir in 1/4 cup grated fresh Parmesan cheese.
