Grilled Beef Sandwich Supper

For dinner tonight, try our flank steak and roasted red pepper sandwich served with a quick-and-easy pineapple smoothie. (Serves 4)

Grilled Beef and Pepper Sandwich

Total Time: 45 minutes

Vegetable chips 

Pineapple shake: Combine 4 scoops vanilla low-fat ice cream, 3 cups 2% reduced-fat milk, 2 cups chopped fresh pineapple, 3 tablespoons brown sugar, and 1/2 teaspoon vanilla extract in a blender; process until smooth. Serve immediately.

GAME PLAN

1. While grill heats:
• Prepare seasoning mixture for steaks
• Season steaks
• Let steaks stand
• Halve and seed pepper

2. While steak and peppers cook:
• Prepare mayonnaise mixture

3. While steak and peppers stand:
• Prepare shake

4. Assemble sandwiches
