Shrimp and Grits Casserole
• Cherry Tomato Salad Combine 3 cups halved cherry tomatoes, 1/2 cup thinly sliced green onion, and 1/4 cup chopped fresh flat-leaf parsley. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon fresh ground black pepper. Combine 3 tablespoons red wine vinegar, 1 1/2 tablespoons extravirgin olive oil, and 1 tablespoon Dijon mustard, stirring well.
