Easy Cornish Hen Dinner
A mixed wild rice side dish and roasted green beans makes this easy dinner elegant enough for guests. Cook the hens and green beans in the oven together to save time—they both bake at 475°. (Serves 4)
• Oven-roasted green beans Combine 1 pound trimmed green beans, 2 teaspoons olive oil, 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Arrange in a single layer on a baking sheet coated with cooking spray; place in oven on rack below hens. Bake at 475° for 10 minutes or until tender, turning once. Remove from oven; toss with 2 teaspoons fresh lemon juice.
• Long-grain and wild rice blend
Total time: 45 minutes
1. While oven heats:
• Prepare glaze.
• Split and skin hens.
• Bring water to boil for rice.
2. While rice simmers:
• Cook rice.
• Trim green beans.
• Place beans in oven during final 10 minutes of hens' cooking time.
