Asian Rice with Shrimp and Snow Peas
• Spicy-sweet cantaloupe salad: Combine 3 cups cubed cantaloupe, 2 teaspoons chopped seeded jalapeño, and 2 teaspoons chopped fresh mint in a medium bowl. Combine 2 tablespoons fresh orange juice, 1 teaspoon sugar, and 1 teaspoon fresh lime juice, stirring until sugar dissolves. Pour juice mixture over cantaloupe mixture; toss. Chill 30 minutes.• Iced green teaGAME PLAN1. Prepare salad.2. While salad chills:• Cook rice.3. While rice cooks:• Boil water to cook shrimp and snow peas.• Trim snow peas, and chop green onions.
