The slaw tastes better if you prepare it in advance and allow its flavors to meld in the refrigerator. "Cornichon" is the French word for "gherkin," a small pickle. Serves 4
Slaw with feta
Combine 1 tablespoon white wine vinegar, 1 tablespoon fresh lemon juice, 1 tablespoon extravirgin olive oil, 1 teaspoon sugar, 1/2 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Combine 4 cups packaged angel hair slaw, 1/2 cup chopped green onions, and 1/3 cup crumbled feta cheese. Drizzle dressing over slaw; toss to combine.
