Cornmeal-Crusted Catfish Menu

This classic dish requires minimal effort for a delicious down-home suppers. (Serves 4)

Cornmeal-Crusted Catfish

* Combine 1/3 cup light mayonnaise, 1/3 cup reduced-fat sour cream, 1 tablespoon minced seeded jalapeño pepper, 1 tablespoon white wine vinegar, 2 teaspoons sugar, 1/2 teaspoon salt, and 3 cooked and crumbled bacon slices. Add 1 (16-ounce) package coleslaw, tossing well to coat. Cover and chill.
