Comforting Classics Menu
This menu's appeal lies in its simple, straightforward flavors. But if you want bolder taste, stir 1/2 teaspoon chipotle chile powder into the potatoes. (Serves 3)
* Place 1 1/2 pounds quartered new potatoes in a medium saucepan; cover with water. Being to a boil; reduce heat, and simmer 20 minutes or until tender. Drain. Place potatoes in a medium bowl. Add 3/4 cup 2% reduced-fat milk, 1/3 cup shredded extrasharp white cheddar cheese, 1 tablespoon butter, 1/2 teaspoon salt, and 1/2 teaspoon freshly ground black pepper; mash with a potato masher to desired consistency.
